Dry Ager

The selected types of fish are stored "dry" in our special refrigerator. They are allowed to mature slowly. During the maturing process, the meat of the fish becomes even more tender and tastes more intense due to the removal of moisture. Both the temperature and the humidity inside the DRY AGER are precisely controlled and monitored to create optimal conditions for the ripening process.
